STUFFED PASTA SHELLS

Ingredients

  • 12 large pasta shells
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 egg, beaten
  • 1 teaspoon Italian seasoning
  • 2 cups marinara sauce
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh basil, for garnish (optional)

Preparation

  • 1. Cook the Pasta:
    Bring a large pot of salted water to a boil. Add the pasta shells and cook according to package instructions until al dente. Drain and set aside.
    2. Prepare the Filling: In a mixing bowl, combine ricotta cheese, half of the mozzarella, spinach, Parmesan cheese, egg, Italian seasoning, salt, and pepper. Mix until well blended.
    3. Stuff the Shells: Carefully fill each cooked pasta shell with the cheese mixture, using a spoon or your fingers to pack them well.
    4. Heat the Skillet: In a large skillet, warm the olive oil over medium heat. Add marinara sauce and spread it evenly across the bottom of the skillet.
    5. Arrange the Shells: Carefully place the stuffed shells in the skillet, open side up. Pour any remaining marinara sauce over the shells, ensuring they are well coated.
    6. Add Cheese: Sprinkle the remaining mozzarella cheese on top of the shells.
    7. Cover and Cook: Cover the skillet with a lid. Allow it to cook for about 15-20 minutes, or until the cheese is melted and bubbly.
    8. Garnish: Remove from heat. Top with fresh basil if desired, adding flavor and color to the dish.
    9. Serve: Let it cool slightly before serving.
